Must-Read: Recipes For Superfoods
When it comes to the new superfoods that are all the rage — whether it’s quinoa or kale or what-have you — one of the ways that it gets confusing is just how to actually utilize these in recipes. Are you, like, supposed to cook them? Or eat them raw? Or… just kind of stick them in a bowl and watch them for awhile before drowning them in milk or something? There’s a learning curve that comes with any new foods that are supposedly healthy for you that keeps a lot of people away from actually giving them a whirl.
And so today we’re heading over to Men’s Fitness where they have a list of the newest in recipes that utilize superfoods that you need to try. For instance, among the recipes that they’re offering to us, is this great one for barley:
BARLEY AND SNAP PEA SAVORY TOFU BOWL
SERVES: 4INGREDIENTS
2 cups pearled barley
1 1/2 cups shelled organic edamame
1 cup snap peas, ends removed, cut on the bias
2 medium squares smoked tofu (like Trader Joe?s or WestSoy), cut into 1-inch cubes
1 cup wild arugula, optionalFOR THE DRESSING:
2 1/2 tbsp soy sauce
Juice of 1/2 lemon
2 tbsp extra-virgin olive oil
Lemon zest, optionalDIRECTIONS
1) Add barley and 5 1/2 cups of water to a medium saucepan, bring to a boil, then simmer on low for approximately 50 minutes or until all the liquidis absorbed. Remove from heat and cool slightly.
2) Place all dressing ingredients into a large mixing bowl and whisk well to combine.
3) Add cooled barley to the bowl and tossto combine.
4) Add shelled edamame and snap peas, and toss gently to combine. Top off with smoked tofu cubes and arugula, and season the salad, as needed.
